I am a rock star, late summer episode

Homemade chicken soup (spicy-cumin style) with homemade biscuits.

Homemade blancmange with homemade blueberry zucchini muffins for dessert.

Total effort = approximately 3 hours. Total satisfaction = immeasurable.

I'm gonna go knit some socks or something, just to further impress myself.

Blancmange: Put a cup of milk (soymilk works) and a good dose of cinnamon on medium-high heat. In a bowl, combine .25 C cornstarch with .5 C sugar. Add some more cinnamon, plus 2 more C milk. When the cup of milk on the stove begins to simmer, add the cornstarchy milk. Raise the heat in order to boil the whole thing, whisking briskly the whole time. It'll take a few minutes, but when it boils, let it boil for about a minute then remove from the heat. Add some vanilla and some almond extracts. Pour into any handy tiny little bowls, molds, etc. you have and refrigerate over night.

Blueberry zucchini bread: Combine 3 eggs, .75 C oil, and some vanilla. Add 2 C sugar. Fold in 2.5 C zucchini. Add 3 C flour, a large pinch/small handful of salt, 1 t baking powder, and .75 t baking soda. Add some cinnamon and nutmeg. Fold in a generous 2 C of blueberries.

Bake at 350 for about an hour.

Actually, the muffins don't take an hour. I made tiny breads, too, and those took about an hour. I took the muffins out after 40 minutes or so, I think.
